Recipe: Chocolate Orange Cupcakes with Chocolate Orange Fudge Icing

If you hadn't already seen plastered all over my social media, it was recently my best friend Charlotte's birthday so what better way to celebrate than with her favourite thing - chocolate orange! I really enjoy baking (although it's not so much fun when 1. I'm doing it on my own and 2. I'm on a diet), and wanted to give something new a go. My Chocolate Orange Shortbread recipe went down really well and a couple of people even tried it themselves which makes me super proud and that squirmy type of happy so hopefully everyone likes this recipe just as much!

Obviously I'm biased about all my baking, or maybe just sweet things in general, but these Chocolate Orange Cupcakes were amazing so I wanted to share the recipe with you all after having quite a few requests on Twitter! They're really easy to make, literally anyone could do it.

Chocolate Orange Cupcakes with Chocolate Orange Fudge Icing

Chocolate Orange Cupcake Ingredients

3 eggs
Self Raising Flour
Cocoa Powder
Butter (I use Stork for baking)
Caster Sugar
1 large orange (or 2 if you really want the orange flavour to come through)
Cupcake cakes/tins

Chocolate Orange Fudge Icing Ingredients

2 oz Butter (I used Stork)
8 oz  Icing Sugar
2 tbsp Cocoa Powder
Splash of Milk

Don't forget decorations! I literally bought everything chocolate orange I could find - matchmakers, terry's chocolate orange (big ones and segments), and I even found chocolate orange digestives, which can I say is the best invention ever!!

Chocolate Orange Cupcake Instructions

Weigh 3 eggs (in their shells)

Use that weight and put the same amount of butter and caster sugar in a bowl and cream together. If you're doing it by hand, I would always do this part with a fork, I'm not sure why but I just find it combines the butter and sugar better together

Crack the eggs and add them into the large bowl with the butter and sugar

Weigh out the flour to the same weight the eggs were in their shells. Put a couple of tablespoons back in the packet and replace it with cocoa powder to make up the weight then add it to the large mixing bowl and stir in

Grate the rind of a large orange and mix it into the cake mixture. Once you've grated all the way round, cut the orange in half and squeeze the juice into the mixture too

Pour your cake mixture into the cupcake cases or tins (if you're using a tin, don't forget to line it or at least grease it to try and stop the cake from sticking

Put in oven at around 165 degrees for roughly 15 minutes. The cooking time depends on the size of the cake tins

You can tell when the cake is done because when you stick a knife though the middle, there won't be any cake mixture on the knife when you pull it out

Leave on a rack to cool completely before decorating - this is always a step I get so lazy about because I get too excited but trust me trying to put icing on a warm cake will ruin it!

Chocolate Orange Fudge Icing Instructions

I'm going to start by saying this is my mumma's recipe and I swear I have never tasted better fudge icing in all my life. I could eat bowls of it...

Melt the butter in a saucepan and then sift in the icing sugar and cocoa powder.

Grate another orange and add in the zest and also a squeeze of the orange juice for extra flavour

Add in a splash of milk which will give the icing a shine

The consistency shouldn't be so thick that you can't spread it on the cake but also not so runny that it runs off. I kept adding more squeezed orange juice until I got mine to the right consistency but it's personal preference on how thick you want it!

Decorate and ENJOY... remember when it comes to cakes, sharing isn't caring, sharing is silly.

Whilst icing the cakes, you may find the icing starts to set in the saucepan so give it a stir. If it's still stiff put it on the heat for about 5 seconds stirring it around and it'll loosen up.

So these cakes literally couldn't be easier, I think the hardest part is trying not to eat them as you go along.

  1. Sounds easy enough! When I worked in a chalet one of the cakes we baked each week was chocolate orange and it was sooo good, so if these cakes taste half as good i'll be happy! As for toppings, what about jaffa cakes, they are chocolate orange. :)
