Iced Bakewell Traybake Recipe

I loveeeee bakewell tarts so when I came across this recipe I just had to give it a go ready for dessert at a family Sunday roast. 
It definitely didn't disappoint and if I can do it, anyone can!


  1. 500g sweet shortcrust pastry (I used normal shortcrust and it was fine. Pre-made and rolled obviously!)
  2. 6 tbsp strawberry jam
  3. 200g butter, softened
  4. 200g caster sugar
  5. 4 medium eggs
  6. 100g ground almonds
  7. 100g self-raising flour
  8. 1 tsp almond extract
  9. 300g icing sugar
  10. 20 glacé cherries


  1. 1. Preheat the oven to 200°C/fan180°C/gas 6 and grease your tin
  2. 2. If you're not using pre rolled pastry, roll it out big enough to fit the base and sides of your tin
  3. 3. Lay the pastry in the tin covering the base and sides. Cut off any excess around the edges
  4. 4. Spread the jam over the pastry base
  5. 5. Place the butter and caster sugar in a large bowl and beat until smooth and creamy
  6. 6. Beat in the eggs, 1 at a time, adding 1 tbsp ground almonds after each addition
  7. 7. Add the flour, remaining almonds and almond extract and stir well. Spoon the mixture over the jam, spreading to make an even layer
  8. 8. Bake for 35-40 minutes until well risen, firm and golden
  9. 9. Remove from the oven and leave to cool in the tin
  10. 10. In a small bowl, mix together the icing sugar and 3 tbsp water to make a fairly thick icing. When the tart is cold, spoon the icing on top, spreading evenly. Decorate with glacé cherries and leave to set
  11. 11. Cut the tart into squares or rectangles to serve, eat and enjoy!

  3. that cake looks so good! I really want cake now and all I have is fruit and vegetables. I may give this a go at some point
